A blend of 50% Sauvignon Blanc, 30% Schonburger and 20% Chardonnay. All of the grapes are pressed whole cluster before undergoing wild co-fermentation. Bottled at 2 brix and disgorged two months later. The finished wine still has some residual sugar but is nicely balanced with bright underlying acidity. The results are an aromatic ‘frizzante’ style pet-nat. This wine is wacky in the best possible way. Overripe tropical fruits, durian, tire fire.
